I will not even bother with getting fancy with the written word because I love this place! Think of Coobah this way...Latin fusion (Cuba, Spain, Brazil meets the Philippines). I totally ripped off Coobahs website. :)
Jimmy Madla, known to many as Tasty J, brings something pretty fantastic to local foodies who embrace meats that have a fat content like pork belly and the yumminess of chicken skin. Coobah's food embraces various dishes and fuses them together to create an exciting menu that encompasses any hungry appetite. The best thing about Coobah's menu is that it is ever-changing (of course with some signature dishes that remain).
So for a little fun, I thought I would bring you Chef/Owner Jimmy Madla and Chef Kurt Tarpley creating one of their most popular dishes: Chicken Negra Modelo. To say it was difficult to be in the kitchen would be a lie because I enjoyed every moment of it. I trotted over to Coobah to document how this amazing dish is created for you. Enjoy!
From personal experience, Coobah is fantastic for intimate dinners for two or larger parties (with enough notice). The staff is incredibly knowledgeable about the menu as they help navigate the menu and recommend various dishes and drink pairings. Also, check out the wine list. I myself love Coobah's brilliant Mojitos.
